Learning About Coffee - Back to stories

Sam Robison and Mike Willard recently toured Chief Cooker, a coffee roasting facility located on Wheeling St. in Lancaster, to learn how coffee is roasted.

Master Roaster Stephen Walters explained in great detail the process of growing coffee plants, picking the cherries, harvesting the beans, roasting the coffee and bagging the finished product. He explained that coffee beans are a lot like grapes; where they are grown greatly affects the flavor.

Chief Cooker orders coffee from the world over and has a roasting machine that came from Spain. The coffee is roasted in small batches, which means it’s the freshest coffee available.

Sam noticed that bags of coffee from Germany were in the roasting room and asked Stephen why.

Stephen said that Germany has the largest decaffeination facility, and the beans were shipped there from other countries. That’s why decaf costs more!

After the tour, Sam and Mike sampled the coffee.

“This is great coffee,” Mike said after sampling Aged Sumatra Mandheling. Stephen explained that this coffee is kept in a climate-controlled environment for three years to make the flavors more pronounced.

Fairfield Industries’ staff members Matt McClellan and Samantha Siegrist accompanied them on the tour, and they were all amazed at what it takes to make a truly good cup of coffee.
